A Yummy Dessert | Stracciatella Cake

At Yoek we love cake! From the classic Dutch apple pie with whipped cream, to beautiful pastries (almost works of art) from a famous confectionery in the centre of Amsterdam. But we are also happy to bake ourselves, easing our minds on a rainy Sunday morning.

This delicious can either be served with coffee or as dessert. You do not need many ingredients and it is not really complicated!


  • Springform Ø 24 cm / Turban cake form

  • Ingredients:

  • 200 g finely ground wheat flour (tipo 00)
  • 2 tsp baking powder
  • ½ organic orange
  • 200 g cane sugar
  • 200 g of ricotta
  • 2 tbsp almond milk
  • 2 tbsp olive oil (we use our own Oil for Education olive oil)
  • 2 eggs
  • 60 g chocolate drops
  • Preheat the oven to 180° C. Stir the baking powder into the flour and sift the flour. Grate the orange part of the orange peel. Then mix the sugar, ricotta, orange zest, milk and olive oil. Beat the eggs in the batter and stir in 40 g of the chocolate drops. Stir the flour into the batter. Pour the batter into a greased spring form and sprinkle the rest of the chocolate drops on top. Bake the cake for 45 minutes.

    You can choose to serve mascarpone cream with it! Then you have to mix 150 g mascarpone with 2 tbsp soy cream and 2 tbsp powdered sugar.
