Hello darlings, let's cook & eat! Now we are at home so much we like to spend a lot of time in the kitchen. Hereby an easy recipe, delicious but healthy, Asian Funghi it is for today.
Ingredients (for 4p);
500 g dried shiitakes
300 g dried egg noodles
3 Tbsp light soy sauce
1,5 Tsp oyster sauce
2 Tsp sugar
2 cloves of garlic, peeled and chopped
1,5 Tbsp of grated ginger root
130 g bamboo shoots from a can, drained and chopped
200 g fresh oyster mushrooms, chopped
3 spring onions, chopped in small rings
Soak the shiitakes in 125ml boiling water until they are soft. Remove the bottom of the mushroom and chop up the rest. Strain the cooking liquid and keep it separate. Cook the egg noodles for 2 minutes. Drain the noodles. Combine the soy sauce, oyster sauce, sesame oil, sugar, and “mushroom juice”. Heat the peanut oil in a pan and add the garlic and ginger for 1 minute. Now add the bamboo, shiitakes, and oyster mushrooms and cook for 3-5 minutes. Add the sauce and bring to boil. Last but not least, add the noodles, spring onions and cook until hot. Ready to serve, enjoy!
